Parmigiano Reggiano is a type of hard, Italian cheese that is named after the regions of Parma and Reggio Emilia in northern Italy, where it has been produced for centuries. It is made from cow's milk that is partially skimmed and then heated with rennet, which causes the milk to coagulate and form curds.
The curds are then cut, cooked, and pressed to remove any excess whey. The resulting cheese is then salted and aged for a period of at least 12 months, although some producers may age their cheese for up to 36 months or more.
